Disney post #5 Dumbo

So this was actually a very tough dish to decide on. The original animated Dumbo is set in 1940s Florida. There was so many dishes to choose from its mind boggling. I decided to take a bit of a dive into what was happening in the 1940s.


The great depression had just ended in the USA, world War 2 was on going. Food reserves were tight but money was tighter. Early 1940s saw families stretching meals the best they could and that meant ground beef had a place in many meals being an affordable and filling component. As a Canadian I also had to research what food was common in Florida in that decade. This was the first thing that popped up in my search.

My choice was made. Now after all that rambling, without further ado, meatloaf.




Ingredients

3 lbs ground beef

2/3 cup bread crumbs

2 large eggs

1/4 cup dried onion flakes

3 tbsp granulated garlic

1 tbsp salt

1 tbsp pepper

3 tbsp ketchup


  1. Preheat oven to 375°

  2. Mix together all ingredients except ketchup in a large bowl.

  3. Place mixture in a parchment lined bread pan

  4. Press in until pan is filled and top is level

  5. Place in oven and bake for 30-40 minutes

  6. Check temperature with a meat thermometer, bake until meat is 145°F

  7. Cover top of meatloaf with ketchup

  8. Bake for a further 10-15 minutes

  9. Remove meatloaf and rest for 10 minutes when internal temp is 160°F
