Since international Pi day has come and gone pie was on my mind. What better movie to celebrate pie with than Snow White?
Snow white is an original Grimm brother fairy tale set in Germany and published in 1812. In the early 1800s pies were a very popular staple food among both commoners and nobility in Germany. Fruit pies were a daily food among commoners while meat pies were loved by nobility. For this recipe I went back to a super traditional German apple pie. Tart apples and a creamy delicious filling made for a great flavour. Just don't forget the flour like I did the first time I made this!
Ingredients for pie crust
170 g flour (1 1/4 cup)
1/2 tsp white sugar
1/2 tsp brown sugar
1 tsp salt
1/3 cup butter (cold)
4-6 tbsp ice water
Apple filling Ingredients
5 apples
1 cup white sugar
2 tbsp cinnamon
1/4 cup flour
1 cup cream
Mix flour, salt and sugar in a large bowl
Cut in butter and using a pastry blender, blend until mixture resembles pebbles.
Slowly add ice cold water and mix with a fork until the entire mixture retains shape.
Wrap dough in plastic wrap and put in fridge for 1 hour (up to 3 days)
Roll out dough on a well floured surface, into a rough 10" circle and place in a pie dish, crimp edges if desired or smooth out.
Preheat oven to 450°
Peel and slice apples
Mix sugar, cinnamon and flour
Layer 3 tbsp of dry mixture on bottom of uncooked pie crust
Layer half of apples on top dry mixture
Pour half of remaining dry mixture on top of apples and repeat from step 4.
Pour cream on top of apples
Place pie in preheated 450° oven for 10 minutes then decrease temperature to 350°. Bake for 50-55 minutes.
Serve with whipped cream, vanilla icecream or just on its own!
