Disney post #1- Pinocchio's Roast Chicken

Anyone that knows me knows how much I love Disney. My favorite trip was 10 days in Florida for my honeymoon with my lovely wife 6 of those days were spent in Disney world. This is part of a series of recipes I'm starting to put together for classic and new Disney and Pixar movies. In no particular order I'll be putting together both meals and separate dishes that match both the location and the time each movie is based in historically. This chicken is based on a 1891 recipe for brick chicken, Pinocchio was based in 1880 Italy so I thought it fit well for a wood worker in Italy.

Ingredients

Juice from one large lemon

2 tbsp olive oil

1 tbsp sage

1 tbsp thyme

1 tbsp oregano

1 tbsp garlic


So start by cutting the spine out using heavy kitchen shears. Lay the chicken flat and rub with olive oil, lemon juice, and spices. Cover and marinade for a minimum of 2 hours preferably overnight.


Preheat oven to 475° and wipe off most of the marinade with your hands then place chicken on a cooking tray. Take a large heavy cooking dish that can evenly cover your chicken and grease the bottom, alternatively foil wrapped bricks. Place on top of the chicken and place all of that in your oven. Cook with the weight on top of the chicken for 30-40 min or until the chicken breast has reached 165°F. Remove chicken from the oven and take the heavy dish off the top, let chicken rest for 5 minutes before carving and serving. Enjoy!
