Tonkotsu Ramen

I love a good Ramen, making this right from scratch was such a great treat and not that difficult, a lot of moving parts to make this particular ramen but so worth it.



Ingredients (2 servings)

2 cups Pork broth

2 cups Chicken broth

1 tbsp fresh sliced ginger

1 clove garlic

3 tbsp mirin

3 tbsp soy sauce


2 cakes of ramen noodles, 2 servings

4 slices pork belly

3 tbsp canola oil

1 smoked chicken breast, sliced

2 large soft boiled eggs

1 stalk green onion


1. Start by mixing broth in a large pot, mix all ingredients and bring to a light simmer


2. Heat oil in frying pan, add pork belly once oil is hot, fry until crispy and fat is rendered.


3. Boil egg for 8 minutes then remove into ice bath for 5 minutes, peel and slice.


4. boil ramen noodles for 3 minutes*


* you can boil ramen in the broth however the starch will cloud the broth, to avoid that boil separately and add to broth after.
