Spinach artichoke sauce

I just recently made this for the first time and absolutely love this sauce! It's perfect with seafood, this is pictured with Cod however it's great with Salmon or Mussels! This recipe would be great for 4 fish filets or 1lbs Mussels!

Ingredients 1 tbsp olive oil 1/2 cup grape tomato 4 cloves garlic, minced 1/2 cup marinated artichoke hearts 1 1/2 cups whipping cream

1 tbsp red pepper flakes 1 cup freshly grated parmesan 2 cups fresh spinach


  1. In a large frying pan heat oil on medium heat

  2. Add tomatoes and cook until starting to blister, about 5 minutes, stir until tomatoes start to break down

  3. Add garlic and stir for 30 seconds until garlic is fragrant

  4. Reduce heat to medium low and add cream, artichoke hearts and red pepper flakes, bring to a low simmer for 5 minutes.

  5. Add in parmesan and stir until fully melted

  6. lastly stir in spinach and keep on heat until spinach wilts

  7. pour over your choice of accompaniment and enjoy!
