Sweet and Spicy Bacon Brussel Rice Bowl

Sweet and spicy brussel sprouts and bacon rice bowl. Great flavour, super filling and healthy. What more can you ask for?


Ingredients

2 cups brussel sprouts bitnsized pieces (cut as needed)

5 strips bacon

1 large onion

2 tbsp olive oil

1 tbsp butter

Salt and pepper to taste.


Sauce

2 cups water

3 cloves garlic sliced

1 tsp ginger

1/4 tsp dry mustard

2 tbsp ketchup

3 tbsp soy sauce

2 tbsp vinegar

4 tbsp sugar

1 tbsp corn starch


1. Preheat oven to 425°


2. Start with slicing your bacon and onion into small chunks and getting that on a low heat in a small frying pan with your butter. Let that cook occasionally stirring until the onions are nice and browned and bacon is fully cooked.


3. Start your sweet and spicy sauce. Get all your dry ingredients mixed in a sauce pan and slowly whisk in water and vinegar, mix well to prevent any clumping, add spices and let it simmer stirring occasionally. If sauce gets too thick add a bit more water, no more than 1/4 cup at a time.


4. Next up your Brussel sprouts. Any of them that are larger than bite sized slice in half, in a large bowl coat them in olive oil, make sure they're fully coated, place them on a baking sheet cut side down and salt. Put in oven for 25 minutes.


5. Layer cooked rice, brussel sprouts, bacon and onion in a bowl and pour sauce over it all. Spice with cayenne pepper on top for a bit of kick.
