Sweet and Sour Ribs

This recipe is straight out of my childhood, growing up this was a favorite meal. The meat falls off the bone and is just so tender, the sauce is so delicious on rice, and the sweet pineapple just evens out everything so nicely. My mouth is watering.


Ingredients

1/2 cup white sugar

1/2 cup brown sugar

1 tsp salt

2 tbsp corn starch

1/2 tsp dry mustard

1 cup water

1/3 cup ketchup

2-3 tbsp soy sauce

1 can pineapple chunks with juice


1 rack of Pork side ribs

1 tbsp granulated garlic

salt and pepper to taste


1. Pre heat oven to 350F then cut side ribs into individual ribs generously season with salt, pepper and garlic and fully cook in oven about 35-40 minutes


2. While ribs are cooking mix all dry ingredients in large sauce pan then slowly add liquids including juice from pineapple chunks. Mix on medium heat until at a simmer then remove from heat until ribs are finished cooking.


3. Drain most of the grease from the ribs keeping a small amount for flavour then add pineapple chunks to ribs. Pour sauce over ribs and pineapple and cook at 325° for 30 minutes uncovered.


4. Reduce heat to 200° and cover with a lid or foil. Bake for a further 30 minutes.


Serve with rice and enjoy!
