Stuffed Mushrooms

I was recently at my cousins wedding where they had the best stuffed mushrooms. Of course I took that as a challenge to make something even better! These are the perfect appetizers for any meal.




Ingredients

1 dozen large crimini mushrooms

2 tbsp butter

4 oz cream cheese

1/4 cup grana padano cheese, shredded

1 tsp thyme

2 tsp dried parsley

1/4 cup bread crumbs

2 cloves garlic, minced

Salt and pepper


  1. Preheat oven to 400°

  2. Wash mushrooms and remove stems

  3. Rough chop stems into small pieces.

  4. Melt butter in a small frying pan and add mushroom stems

  5. Cook stems till soft and liquid steamed off then add garlic.

  6. Cook for approximately 1 minute then add bread crumbs, stir mixture until bread crumbs are browned, approximately 3 minutes.

  7. Pour mixture into a small bowl and add cream cheese, grana padano, parsley and thyme.

  8. Add salt and pepper to taste then mix everything until well combined.

  9. Spoon mixture into mushroom caps, top with a Sprinkle of grana padano and place on a parchment lined baking sheet.

  10. Bake for 20 minutes, finish with parsley on top. Enjoy!
