Spanish rice bowl with chicken.

Tasty, easy and super filling!



Ingredients

1 tbsp olive oil

1 large onion, chopped

1 1/2 cups rice

2 cloves garlic, sliced

3 cups chicken broth

1 cup salsa

1 can black or kidney beans, rinsed


1 1/2 cups corn, steamed


Optional

1 lbs cooked chicken breast seasoned


1. Cook onion until clear in a large pot.


2. Add uncooked rice and sliced garlic to pan. Fry until rice is golden.


3. Pour broth over rice, avoid pouring directly on hot surface.


4. Add salsa and rinsed beans, mix well and bring to a light boil, cover and reduce heat. Simmer until liquid is gone.


5. Mix in steamed corn, finish with parsley or cilantro.
