I went nice and easy on this, pan seared the pork chop then finished in a garlic mushroom sauce. Give yourself a treat and put this sauce on the rice.

Garlic mushroom sauce

Ingredients

1/4 lb mushrooms sliced

3 tbsp butter

3 tbsp corn starch

1/2 cup milk

1 1/2 cups water

2 cloves garlic minced

1/8 tsp dried mustard

Salt and pepper to taste

Optional crushed red pepper

1. Cook mushrooms in butter till soft then mix in cornstarch until mushrooms are well coated, pour in water slowly and stir well to avoid clumping.

2. Add milk and spices, bring to a light simmer

3. Pan fry pork chop in oil to brown nicely on either side.

4. Add pork chops into sauce. Simmer until pork is fully cooked (145°F) rest for 3 minutes then serve. For a little spicy kick sprinkle with red pepper flakes.
