Pretzel bites with Mustard cheese dip

Looking for a tasty anytime snack? Look no further. Pretzel bites with a mustard cheese sauce.
What you see in the picture is a halved version of this recipe which worked great for 2 people as a late night or game day snack.

Ingredients
2 1/4 tsp dry active yeast
1 1/2 cups warm water
1 tbsp salt
1 tbsp sugar
565 grams flour
3 tbsp olive oil (divided)
60 grams baking soda
2 eggs
Coarse salt
1. Add yeast, water, salt and sugar to mixing bowl and rest for 10 minutes until yeast is bubbly
2. Add 2 tbsp oil then slowly add flour to mixture, using a dough good combine until dough pulls away from sides of bowl.
3. Transfer to a clean, oiled bowl and cover for 1 hour at room temp.
4. Preheat oven to 450°
5. Fill a large pot with water and add baking soda and bring to a boil.
6. Punch down dough and shape it into a large roll on a floured surface, cut in half or into 3rds if easier. Cut into bit sized chunks and set aside.
7. Add dough to boiling water. Boil for 1 minute and set on a parchment lined baking sheet.
8. Egg wash and generously salt, bake for 18 minutes.
Cheese sauce
1/4 cup butter
1/4 cup flour
2 cups milk
2 cups shredded sharp cheddar
2 tbsp honey mustard
Dash of paprika
Salt and pepper to taste
1. Melt butter in a large sauce pan and bring to a light simmer, add flour and whisk until smooth and combined
2. Slowly add milk 1/2 cup at a time whisking to combine and smooth. Bring milk to a simmer then remove from heat.
3. whisk in mustard and spices then cheese. Keep whisking until completely smooth.
