Pork Rib Roast

I love a good roast! I mean, juicy, tender, gravy soaked meat, what isn't there to love?


I tried my hand at this pork roast using more Italian inspired flavours to create a very nice herb crusted rib roast.

Ingredients

1 3-5 lbs pork roast, bone in

2 tbsp olive oil or whole grain mustard

2 tbsp oregano

1 tbsp basil

1/2 tbsp sage

1/2 tbsp thyme

4 cloves garlic minced

1 tsp salt

1 tsp black pepper


  1. Preheat oven to 475°

  2. Pat dry pork roast with paper towel

  3. Rub minced garlic liberally over whole pork roast

  4. Rub a thin layer of mustard over too (fatty side) and sides of roast.

  5. Mix together the rest of your seasoning and lightly pat into the mustard crust

  6. Place roast on a baking rack with minimum 1 cup of water in tray.

  7. Place into oven for 15 minutes

  8. Reduce heat to 375°

  9. Bake for a further 1.5- 2 hours until pork reaches 145°F in the thickest portion of meat

  10. Let rest for 10 minutes before slicing.
