Orange Poached Pears

This dessert was a fathers day treat to myself. Light, summery and delicious. This recipe is gluten free and super easy to make. The grilled pears, lightly poached in orange juice and topped with a sweet almond crust go great with a side of vanilla ice cream!
Ingredients
6 large pears, peeled and quartered
3 cups orange juice
4 cinnamon sticks
2 tbsp cloves
1 cup white sugar, divided
1 cup fine almond flour
1/4 cup roughly chopped almonds
3 tbsp butter, melted
*grilling pears is optional but is great to bring out the natural sweetness of the pears and works great to maintain the texture of the pears after poaching.
*preheat bbq to 500°
Peel, core and quarter pears
*grill pears on bbq over high heat until outside begins to lightly caramalize
Preheat oven to 350°
In a large pot add orange juice, cinnamon, cloves and 3 tbsp of sugar to pot. Heat to a light boil while stirring to combine sugar.
Add pears to boiling pot and poach pears for 10 minutes until soft.
Remove pears from pot and let cool for 10 minutes.
Add pears to casserole dish and then spoon over liquid from pot until the bottom of the dish is covered with approximately 5 ml (1/4") of liquid.
In a separate bowl mix almond flour, chopped almonds, the remainder of the sugar, and melted butter
Spoon almond mixture evenly across the top of your pears
Bake for 25-30 minutes in oven until lightly golden.
Serve warm or chilled as per your own preference.
