Greek Ribs

I used to love this one appetizer at a local restaurant but then it was taken off the menu! Took a few years but I finally have a copy of those ribs.





Ingredients

2 racks side ribs (3lbs)

2 tbsp dried oregano

6 cloves garlic, finely chopped

1/4 cup olive oil

1/4 cup lemon juice

1/4 tsp salt

1/4 tsp pepper


  1. Cut ribs into single bone portions

  2. In a large plastic bag mix all ingredients and leave in refrigerator for 8 hours, flipping occasionally to ensure ribs are evenly coated

  3. Preheat oven to 425°F

  4. Place ribs on a parchment lined baking sheet.

  5. Bake for 10 minutes at 425° then reduce heat to 300° and bake for another hour.

  6. Serve with Tzatziki and enjoy!
