Let's set the mood here. Paris 1910, the city has just gotten over the great flood. More than 14,000 buildings had been flooded. At this time cafes were becoming more and more popular. Hearty foods like onion soup took over during this year. That, and the Croque Monsieur. This delectable, cheesy, ham sandwich, that first showed up on a Paris menu in 1910, is filled and topped with bechamel sauce.



Ingredients


Bechamel sauce

1/4 cup butter

1/4 cup flour

1 1/2 cups milk

1/2 tbsp Whole/Dijon mustard

Salt and pepper to taste


Sandwich

6 slices French bread

1 1/2 cup shredded emmenthal or gruyere cheese

1/2 cup grated parmesan

6 slices smoked ham


  1. Melt butter in a large pan on low until lightly simmering

  2. Add flour and whisk until completely smooth

  3. Add milk 1/2 cup at a time whisking after each addition until completely smooth

  4. Bring sauce to a light simmer then remove from heat

  5. Whisk in mustard, salt and pepper then let cool.

  6. Preheat oven to 425°

  7. Slice French bread then toast till golden brown.

  8. Grease a cooking sheet then place 3 bread slices on the sheet

  9. Spread bechamel sauce on top of the 3 pieces of bread

  10. Layer 1/2 of the emmenthal or gruyere cheese on top of sauce

  11. Follow up with 2 slices of ham, more bechamel and the remainder of the emmenthal/gruyere.

  12. Top with the other slices of bread

  13. Layer bechamel sauce on top of sandwich then top with grated parmesan

  14. Place in oven and bake for 10-15 minutes until cheese is golden brown.
