Disney post #6 Mulan Stir Fry

Tackling Mulan was a fun experience. The legend of Hua Mulan first showed up in 300-400 AD. This was during the Northern Wei dynasty. It was an exciting culinary time in China. Papers and books were being written on the importance of a good diet, color was deemed an essential part of cooking. Fermentation for bread had only started being used roughly 100 years before. In Northern Wei rice was not widely used due to the climate. Soups were falling out of common use during this time frame but stir fry became a daily cooking method.


Taking ll of this in to account I decided on a very healthy, basic and tasty meal of beef and broccoli stir fry with green onion cakes.




Green onion cake ingredients

Dough

270 grams (2 cups) flour

1/2 tsp salt

1/2 cup boiling water

1/4 cup cool water


Filling

40 grams (1/4 cup + 2tbsp) flour

1/4 cup vegetable oil

1 tbsp sesame oil

1/2 tsp salt

8 stalks green onion


  1. Combine flour and salt for dough

  2. Slowly drizzle in boiling water and mix with a fork or chopsticks

  3. Once boiling water is added slowly drizzle in cool water and continue mixing with a fork.

  4. Knead dough for 5 minutes until smooth, if too dry Sprinkle water on, if too wet and sticky add flour.

  5. Rest dough in a clean bowl covered in plastic wrap for 1 hour at room temperature.

  6. While dough is resting combine all filling ingredients except green onion and mix until a smooth paste

  7. Cut green onion lengthwise then slice into small pieces.

  8. Knead dough after rest until smooth then separate Into 6 even portions

  9. Roll dough into balls and cover with plastic wrap

  10. One at a time take a dough ball and roll it out into a rectangle on a well floured surface, flipping often to prevent sticking.

  11. Spread roughly 1 tbsp of oil mixture on dough leaving a long and short side of dough clean.

  12. Sprinkle 2 tbsp of green onion on oil mixture.

  13. Roll dough into a tight long log. Squeeze dough to close end then roll tightly squeezing out all air. Set aside And repeat with all remaining dough balls.

  14. In a small frying pan or wok heat up peanut or canola oil for frying.

  15. Using your hands squish down a roll into a thin pancake.

  16. Place pancake into oil and cover with a lid. Cook for 2 minutes then flip and cover, cook for 2 more minutes.

  17. Uncover and continue frying until cooked, pressing down with spatula to give even heat.



Stir fry ingredients

1/4 cup peanut or canola oil

1 lbs flank steak

1 large head broccoli

2 cups sugar snap peas

3 cloves garlic peeled and sliced

1/4 cup soy sauce

1" peeled and sliced ginger

2 tbsp rice vinegar

Green onion for garnish

Red pepper flakes for garnish (optional)


  1. Thinly slice beef with the grain.

  2. Mix say sauce, garlic, ginger and rice vinegar for marinade

  3. Store beef with marinade for minimum 4 hours

  4. Heat a large wok up on high heat then add oil. (Maintain a high heat without letting oil smoke)

  5. Add broccoli and snap peas for 3-5 minutes before adding beef and marinade.

  6. Add in beef with marinade to wok cook on high heat stirring constantly

  7. Serve with green onion and optional pepper flakes
