Croissant aux Almonds

I can't even describe how delicious these are, croissants, almond cream, sliced almonds on top. The smell as they bake is like walking into a French patisserie. Give yourself a treat, make these and you wont be disappointed.

Ingredients

8 1-day old croissants

sliced almonds for topping

1/4 cup powdered sugar, optional

Syrup

1 cup water

2 tbsp white sugar

4 tbsp dark rum *


Filling

1 cup ground almonds/ almond flour

1/2 cup white sugar

pinch of salt

1/2 cup room temp butter

2 large eggs

1/2 tsp vanilla


  1. Leave your croissants on your counter, uncovered overnight start these the next day

  2. cut croissants in half and leave both sides open to air while prepping syrup and filling

  3. combine water, sugar and rum* in a sauce pan and heat until sugar is dissolved, set aside to cool to room temp

  4. in a large mixing bowl combine ground almonds, sugar and salt and combine

  5. mix in butter, eggs and vanilla and whip until completely combined, scrap down sides of bowl to make sure everything is combined.

  6. preheat oven to 350°

  7. dip cut sides of croissants into room temperature syrup, you do nott want it dripping but just wet

  8. evenly apply filling to each croissant on one side, leave some extra filling to rub on top of each croissant

  9. place sliced almonds on top

  10. place croissants on a lined or greased baking tray and into preheated oven. bae for 15-18 minutes

  11. let cool for 5 minutes, you can finish with powdered sugar, personally I prefer without
