This is a list of basic recipes that i'll be adding to as time goes on, other recipes may refer back to this post.
Béchamel Sauce
1/4 cup butter
1/4 cup flour
2 cups milk
salt and pepper to taste
1/2 tbsp whole grain mustard (optional)
in a large sauce pan melt butter and bring to a very light simmer
add in flour and whisk till smooth
add in milk 1/2 cup at a time, whisk between each addition until completely smooth
whisk in salt and pepper and mustard if using
Mornay sauce\
béchamel sauce base
3/4 lbs cheese
whisk in cheese to béchamel sauce to adjust sauce into a mornay.
