Almond Cherry Fudge

Recently I've had a craving for fudge, unfortunately I've also been working long hours and only have 1 day off a week so the last thing I want to do is spend my time shopping around for a fudge to buy when I coukd instead spend that time testing out my own recipes.
This recipe is the culmination of 3 different attempts at making fudge. The first attempt was a chocolate cherry fudge that fell apart on me. The second was a lime fudge that looked great and had the texture but man oh man was that sweet! Realizing the issues I was having I fixed those mistakes and this recipe is the answer to what I've been craving.
Ingredients
3 cups dark or semi sweet chocolate chips
1/4 cup sliced almonds (divided)
1 tsp Almond extract
3 cups white chocolate chips
1/4 cup halved maraschino cherries
2 tbsp maraschino cherry juice
1/2 cup marshmallows (divided)
2 cans condensed sweetened milk (divided)
3-5 drops red food coloring (optional)
In a large pan add the dark chocolate chips, 1/4 cup marshmallows and 1 can condensed milk
In a 2nd large pan add the white chocolate chips and the remaining marshmallows and condensed milk
Turn both pans to a medium low heat and slowly melt the chocolate chips, stirring constantly with a whisk until marshmallows have completely melted and combined.
Add sliced almonds and almond extract to dark chocolate mixture stirring to combine
To white chocolate mixture add maraschino cherries and juice. To make this portion pop add food coloring till you achieve the desired pink or red coloring. Stir until combined.
While pans are still hot add mixtures to a tinfoil lined 9x9 baking pan in separate layers.
Run a butter knife through all layers of the pan to swirl the layers together.
Top with a Sprinkle of sliced almonds
Cover and refrigerate for 4 hours or until full set and solid.
